Meat Sweats With Jordie: Getting Our Chef Carl Casper On With Some Barbecubano Sandos
I can't imagine there has ever been anybody who watched the movie "Chef" and didn't immediately envision a life of slingin' some cubanos out of a food truck afterwards. Then you look up all the regulations and certifications you need to open up a food truck and you quickly return to just thinking it's a kick ass movie. But I'm sure there are a couple of chefs out there who decided to get into the food game after watching this scene.
So in this week's episode, we try our best to recreate that sandwich. Starting off with the mojo marinade on the pork. Then smoking the little 3lb boneless pork butt for 3 hours. Tossing it on a roll with some ham, swiss, pickles and mustard. Finally press the sandwich down and get that cheese melted a little bit to complete one of the most delicious combinations of flavors you'll experience in a while. Thank god someone throughout the history of humanity decided to invent sandwiches.
Sidenote #1: I'm going to try to get better at actually using recipes here so folks can have an easier time recreating these cooks. But I have such a hatred for measuring ingredients, so it's tough for me to not just eyeball everything. Honestly that's the best way to go about it anyway. Just cook with your gut, not measuring cups.
